Shrimp Noodle
Shrimp Noodle is made of flour and shrimp. It tastes savory and mellow. The noodle is delicious due to the shrimp soup. The making process of shrimp soup in Xiamen is quite different from that of other places in China. In Xiamen, the shrimp is pounded and washed repeatedly to get shrimp juice. Pour the shrimp juice into the noodle and cook them together with oil, shallot, and pig bone soup. When the soup turns red, it is the time to turn off the oven.
