Wenzhou Food---Nanxi Wheat Flour Cake
Nanxi Wheat Flour Cake originated from Shatou Village (沙头) in Yongjia County (永嘉) of Wenzhou. Shatou Village was traditionally the ferry pier for passenger boat and a place for travelers' rest. Nanxi Wheat Flour Cakes were for snacks or simple meals for long tour trips in the past. The main ingredients for this delicacy are wheat flour, chicken eggs and rape seed oil. Stir them all to become a well mixed stuff and make it to be a "凹" (Chinese character pronounced "ao", which means a concave shape). Then add preserved vegetable pieces, fresh pork, small shrimps and so on. Wrap all the stuffing tightly and use a wooden hammer to beat and press it to become a round shape. The cake will be fried for a while and then bake it in an over in order to make it hard, crispy and fragrant.
