Food---Bean Curd Jelly
Have you ever seen pretty white yulan flowers ? The bean curd jelly (豆腐花, literally means "bean curd flower") has many white bean curd flowers, like white yulan flowers, flowing on a small dessert bowl. If you hold and rock it lightly, the flowers will move around like real life yulans. It is a pity that you just eat them without appreciating the utmost beauty.


Although the bean curd jelly pieces are so small, the making process should be painstakingly delicate. The jelly has to be very soft and will be melted in the mouth without any residue when eating. The taste should be quite sweet, fresh and daintily, but it is not having strong flavor. Small pieces of preserved Szechuan pickle and dried shrimp are added, as well as some invisible seasonings.
