Ningbo Food---Thousand-layer Cake of Fenghua

 

 

The thousand-layer cake (奉化千层饼) is also known as green moss cake because it contains much of this ingredient. It is a specialty snack in Xikou Town in Fenghua of Ningbo city. It was originated by Wang's Brother (Wang Maolong and Wang Hualong 王毛龙, 王化龙) in early twentieth century, their shop's name was Wang Yong Shun (王永顺), and called locally as Maolong Thousand-layer Cake. Nowadays the shop is being operated by the third generation of Wang's disciples.

The appearance of this food looks like dried bean curd, with sesames spread on it. But it has many pretty and crispy layers (at least twenty-seven !) with mixed salty and sweet tastes. The uniqueness of this delicacy has made it becomes an ideal gift for friends and relatives, or as a travelers' food. 

Containing fine wheat flour, green moss powder, sesames, saleratus, soft white sugar, soy bean oil and so on. The making process is such that steam, roll and stir the wheat flour, do the latter two jobs for the fine white sugar. And then make the stuffing, to which it should be wrapped into the flour skin. Roll the cake round to make it has many layers, and then roll it to make it looks good on both sides. Lastly put a little amount of water and dots of sesame on it, and then bake and make sure it will be crispy.
