Egg cake is a snack that has been very popular at Lanxi in Jinhua with a long history. It has an interesting story about the delicious snack. Famous Chinese opera theorist and gourmet flourished in early twentieth century, Li Yu (李渔), thought that shallot, garlic and leek could dirty human's teeth and damage stomach, so in his life these things shouldn't be eaten. In one spring, Li was suffered from a severe cold and he couldn't get up for a long time. His concubines found a traditional recipe to help him – shallot soup, which was very beneficial. But the strong taste had repelled him from drinking the soup. Thus his health had no improvement for the next three days. Li's daughter was so smart. She knew that her father liked to eat a bowl a noodles a day and loved chicken eggs very much. So that she made wheat flour cake with eggs and added many small pieces of shallot. By everyone's surprise, Li Yu loved the aromatic fragrance so much, but he didn't find out there was the shallot smell. His daughter fed him piece by piece when the cake was still very warm. He ate a lot. And after a long night of good sleep, his body had greatly improved the following day.
After Li's recovery, his daughter revealed the secret of her cooking of the recipe. Since then, Li had changed his view towards shallot.
