Hefei Snack

 

Luzhou Snack (Luzhou is the traditional title of Hefei), is strongly characterized by the local features. It is the same as Luzhou Cuisine, in Anhui-style cooking, it has a high-level status.

Historically, Hefei was the ancient battleground during the time of Three Kingdoms and East Jin Dynasty. It is located between the Yangtze River and Huaihe River. It is also facing the north mouth of Chaohu Lake. It was emphasized to be a high-level administration office. After the liberation in 1949, it was selected to be the provincial capital of Anhui Province. It has been the center of provincial politics, economy, culture and transportation. Hence it collects many snacks from different places of Anhui Province and inherits the quintessential part of Luzhou Snack.

After the provincial capital moved to Hefei from Anqing, the snack was rapidly developed. It covered 70% of the dining market. Other than the formal restaurants, many small informal dining booths and some sellers selling their food via shouldering the food were also welcomed. The snack includes: oil-fried stinky tofu, tea-boiled eggs, pumpkin cake, wonton, white-sugar dumpling, mung-bean cake and so on. Some restaurants are also good at the management and their cooking procedures and techniques are also elaborate such as Chicken-Soup knife-cut noodles, wonton dumpling, chicken dumpling, crab small dumplings etc. The wheat food is always ranked to be the top places
