Green Tea



Originating in China, green tea is the most-consumed category, with an annual production of over 100,000 tons in China alone. It grows in all provinces of south China, plus the northern provinces of Shandong and Shaanxi.

Green tea is processed using a method different from that for black tea or oolong tea. It is unfermented, undergoing minimal oxidation during processing. Maximum amounts of vitamins, polyphenols and antioxidants (the secret of its health benefits) are retained as a result, while driving away those undesired substances with lower boiling points. Around fifty percent of chlorophyll remains, explaining why the tea brewed takes on a green color.

Health Benefits of Green Tea

Green tea has been used as a medicine in China for at least 4,000 years. Scientific studies have identified a few health benefits of green tea. Drinking green tea is helpful in treating or preventing: cancer, rheumatoid arthritis, high cholesterol levels, cardiovascular disease, infection, impaired immune function, etc. More recent evidences suggest that green tea can even help dieters as a combination of caffeine and green tea extract burns more calories that merely caffeine. Green tea may also help prevent tooth decay as it can also kill the bacteria that cause dental plaque.

Drinking green tea is helpful in treating or preventing:

A compound contained in green tea is the secret of such medicinal benefits – epigallocatechin gallate (EGCG), a powerful anti-oxidant. It inhibits the growth of cancer cells, lower LDL cholesterol levels, and inhibits the abnormal formation of blood clots (thrombosis being the leading cause of heart attacks and stroke). Besides, EGCG limits the harmful effects of smoking and a fatty diet. The incidence of heart disease is much lower in green tea-drinking populations (for instance in Japan, even though over seventy percent of males smoke).

It is noteworthy that other Chinese teas (oolong, black, etc.) do not have similar medicinal properties. The reason is while green tea are processed by steaming, black and oolong tea leaves are fermented, in which process the EGCG is converted into other, less effective compounds.
