Nanjing Food---Ghee Baked Cakes of Qifangge

Qifangge (奇芳阁) is the oldest Muslim restaurant in Fuzimiao (Nanjing Confucius Temple) area. It was founded during the reign of Qing Dynasty's Guangxu Emperor (1871 – 1908). Among the eight famous snacks in old Nanjing, Qifangge restaurant has occupied two of them, to which the one of these is Ghee Baked Cake. The making of this delicacy is seemed quite simple. It is made of white wheat flour and oily ghee from fat duck. The small and round-shaped cakes are then baked to a golden yellowish color and softly crispy. Nanjing's locals regard this Islamic delicacy is an essential ingredient to a Fuzimiao tour. They think that it is not having visited Fuzimiao if you didn't taste Ghee Baked Cakes of Qifangge.
