Huizhou Cuisine
Huizhou cuisine comes from Huizhou Anhui province, and its development can’t leave the objective environment of Huizhou area. Due to it is the joint zone of two different climates, it has sufficient rainfall and a medium climatic condition, and hence it also produces a large number of local products. There are more than 1470 sorts of plants on the Huangshan Mountain; many of them are suitable for eating. The treasured plants or wild vegetables are the good origins of Huizhou cuisine such as mushroom, tremella, black fungus, lily flower, cress and so on; all of these resources are all wild. The bamboo shoots have 17 kinds. Due to the different kinds, cut methods and the auxiliary ingredients, they have many different eating ways. As far as tofu, it also has many different styles such as water tofu, furring tofu, stinky tofu, Kwan-yin tofu, laba tofu and acorn tofu and so on.
Due to the advancement of Huizhou medicine, there were more than 700 doctors in Ming and Qing Dynasties and more than 600 medicine books. There were also many cuisines made by former doctors for body-building and health-keeping. Today they have been adopted into the Huizhou cuisine such as braised wugu chicken with medlar braised lily with sugar candy and so on. In the past, stir-fried cuisines with the dish color red mainly express on the usage of soy sauce. The soy sauce of Huizhou is made of the beam and the oil used mainly from the colza oil. In a short time with the dense and strong fire to burn, it looks red. The use of ham for seasoning is also another convention in Huizhou cuisine. The local people made ham by themselves, such kind of techniques are popularized in Huizhou. The gastronomes highly comment on Huizhou ham, although it is not so famous as Jinhua ham, in fact these two places are very near, and they exchanged a lot in the process of ham making.
