An old-time imperial capital, the northwestern Chinese city of Xi’an has a rich and distinct food culture and hosts a number of time-honored brands in the catering service industry. Of them, Defachang with its famous dumplings banquet is the flagship brand. It is a place for one to enjoy China’s dumpling culture to the full.
The restaurant sits between the Drum Tower and the Bell Tower in downtown Xi’an. It was founded in 1936, and has been ranked as an “AAAAA-Class” restaurant in China. The area of premises totals 4847m2, and can serve over a thousand customers at any given time.
What distinguishes Defangchang’s service is its artistic rendering of delicious jiaozi, Chinese dumplings. The master cooks of Defachang make dumplings to diverse shapes from ducks to swans to frogs to flowers, with all different flavors from spicy chicken to leek and pork to turtle to rabbit to mushrooms or tomato. A long table is set at the entrance, displaying all of the different types of dumplings the restaurant serves.
